CUCUMBERS – What do you know about them?
Many of you, who have discovered the real meaning of good health, are thinking about changing your eating habits. I have been in this mode for years, and have been sharing what I know and am aware of food wise, in order to help each of you on your health changing journey.
Cucumbers are a food that offers many health benefits which include the following:

Nutrients: They are low in calories but high in vitamins and minerals.

Antioxidants: They contain antioxidants.

Hydration: They promote hydration due to their high water content.

Weight loss: They may aid in weight loss.

Blood sugar control: They are helpful in lowering blood sugar levels.

Digestive health: They are good for support of regular bowel movements.

Bones: Cucumbers are high in vitamin K, which is beneficial for bone health.

Heart: They improve heart health.

Cancer protection: Cucumbers may also offer protection against cancer.
I know people who hate cucumbers, but can only say that they don’t like the taste. Writing this blog makes me think of all that they are missing in their health journey.
I love cucumbers and have known my whole life that they are one of the best foods you can eat for maintaining good health. As a child we grew them in our ‘victory garden’ as it was called in those days.
While researching I came across the following video and would like to share the link. It verifies much of the information I have already given above and more.
Because I usually buy more cucumbers than I can eat up quickly, they deteriorate and I end up throwing them away. So I checked out information about freezing them. There wasn’t much on this subject – but I did find out that you can freeze them. However, because of their high water content when you thaw them they are mushy, but are still edible.
I found that freezing them on parchment paper helps to keep them crisper and less mushy. In this condition they can be put in soup, in smoothies, and in water with a touch of lemon and honey or your preferred sweetener.
