I will make this blog short and sweet. Why not start Christmas day off with tasty, healthy foods. The following is a great recipe for breakfast.
MORINGA BREAKFAST SMOOTHIE
1 small banana
1/4 cup blueberries for fruit of choice
1 Tbsp. Moringa Powder, or leaves (fresh or dried)
2-3 chunks of fresh pineapple
1/2 cup plain or flavored Yogurt
Honey or Maple Syrup to sweeten
Crushed Ice
Put all the ingredients into a blender. Blend until smooth. You can substitute Canned Coconut milk for yogurt – which I do because it is thick and yummy. I use it to make my yogurt. The color of the smoothie will vary according to the ingredients. You can also add veggies (broccoli, kale, spinach, etc.). Make it your own – be creative
Do you like to snack during the day. This recipe makes a delicious snack (like eating candy):
MORINGA COCONUT BALLS
1 1/2 cups Crushed Walnuts
1 cup shredded Coconut packed down
2 Tbsp. Moringa Powder
1/2 cup Peanut butter or Almond Butter
1 Tbsp. agave syrup
2-3 Tbsp. Coconut Flour (it holds the mixture together)
1 tsp. Vanilla extract (optional
1/4 tsp. sea salt (optional)
After you have crushed the walnuts stir them together well with the coconut and Agave syrup – or you can put them in a blender and blend. I like to stir mine. If you find the mixture a little runny add more Coconut flour until the mixture is firm enough to roll into a ball. Roll a heaping teaspoon into a large grape size ball. Roll the ball in loose shredded coconut to coat. Put in a container. Store in the refrigerator. Makes 36 large grape size balls. Stores well for up to 3 months.
And of course, something delicious to drink cannot be forgotten!
CHRISTMAS NOG – Dairy free and non-alcoholic
1 quart Coconut milk
1 pkg. Instant Coconut Pudding or Vanilla Pudding
1 tsp. Rum Extract (for flavor) – not Alcohol
1/2 tsp. Ground Nutmeg
1/2 tsp. Allspice
1/4 tsp. Cinnamon
Combine all the ingredients in a blender on high-speed until well mixed for approximately 2 minutes. Put in a quart container with a lid and refrigerate to allow the nog to thicken. Put in cup or glass. Top with whip topping and a sprinkle of nutmeg or cinnamon. Contains fewer calories than the store-bought Egg Nog. A great drink for the whole family – including the kids.
