Test Kitchen – Eggs

Did you know that the color of the egg doesn’t make a difference? The color of the egg indicates the color of the chicken that laid the egg….except for man colored Easter eggs.

I am a lucky person. I have a friend who owns a chicken farm. I am able to get fresh eggs when I need them…delivered to my door. No pesticides or injections to enhance the chickens or the eggs etc. I do vouch for the fact that fresh ‘right off the farm’ eggs taste so much better than store-bought eggs…which I no longer buy. Soooo, what do you and I need to know about eggs?  I will try to cover all aspects in reference to eggs, for you, my readers benefit.
EGGS!

I assume you all are aware that eggs purchased by the dozen in the grocery store are already weeks old before they hit the store’s shelf. Eggs do have a long shelf life as eggs freshly hatched will last for several weeks without refrigeration due to a special coating on the eggs outer shell. It is called bloom. Bloom acts as an oxygen inhibitor and it keeps the egg from breathing. The slower the egg breathes the longer the shelf life. This is interesting, because I didn’t know eggs breathe. Some companies take the ‘bloom’ off the egg before they package them – with a special washing method. I understand they remove the ‘bloom’ for sanitary reasons as it holds bacteria. The problem with taking it off is that it cuts down the shelf life of the egg.

My cousin’s family raised eggs for market. When I visited their farm in the summer, I remember doing what is called ‘candling’ the egg. To do this, we held the egg up to a special light and because the egg-shell is translucent, you could see inside of the egg. Eggs are candled to decide the condition of the air cell, yolk, and white. Candling detects bloody whites, blood spots, or meat spots, and enables observation of germ development, as well as embryo development. I bought a dozen eggs at the grocery store once, and when I broke open one of the eggs to make an omelet, it had a dead chicken inside. I threw up. I never ate eggs again for a long time. Apparently that dozen of eggs had not been ‘candled’.

Today, candling is still done, but by various methods: 1) eggs are placed on a conveyor belt and pass over mechanical sensors integrated with computerized systems for defective eggs. 2) advanced technology, utilizes computerized integrated cameras and sound wave technology for the segregation of eggs.

Eggs are pasteurized when used for freeze drying, imitation egg products, and egg substitutes. The pasteurization of shell eggs means they must be kept refrigerated to retain quality. This is not often done.

Eggs don’t have to be graded. A company wishing to have their eggs graded pay for this USDA service. If a carton of eggs has not been graded it will have “Grade A” on the carton without the USDA shield.

Once refrigeratedeggs should stay that way to avoid bacteria growth. Do not wash eggs – washing takes off the (bloom) protective coating. Keep eggs in the carton they came in to retain freshness. Do not transfer eggs into the new fangled egg holding devices you can buy at the store. Also, do not put eggs in the door of the refrigerator, because that is the warmest part of the refrigerator and the temperature fluctuates as you open and close the door.

How do you tell if the egg is fresh? Apply a simple test – all you need is water. When you are ready to use your eggs. Just fill a bowl with cold water and place your eggs in the bowl. If they sink to the bottom and lay flat on their sides, they’re very fresh. If they’re a few weeks old but still good to eat, they’ll stand on one end at the bottom of the bowl. If they float to the surface, they’re no longer fresh enough to eat and should be discarded. As the egg ages, the air sac in the end of the egg increases in size. This is what makes the egg float. Also, the air sac in the end of the egg – when it gets larger makes the egg easier to peel. That is why older eggs are better to hard boil…but need to be eaten within 2-3 days.

WHAT ABOUT ORGANIC EGGS/FREE RANGE EGGS?
Organic eggs are produced through organic means.         
The chickens are fed organic feed. According to the USDA, organic means that the laying hens must have access to the outdoors (except on rainy days), cannot be raised in cages, and cannot be given any low-level antibiotics during infectious outbreaks.

Free Range chickens are caged, but when outdoors, the range area is fenced. They can roam freely outdoors for at least part of the day.

There is so much to learn about eggs. You can do your own research and come to your own conclusion about eggs.  Goose and duck eggs are also good. I found http://www.fsis.usda.gov to be a very helpful site, as is Wikipedia.

Did you know eggs are not considered to be dairy but are considered to be an animal by-product? I will talk about the cholesterol from eggs in another blog.

Arthritis

What Other Symptoms Does RA Cause?

Other than myself, I don’t know of many folks who do not have ‘arthritis’ in one form or another. Arthritis is an ambiguous term. There are over 100 different conditions that can be termed “arthritis.” Two of the most heard of are Osteoarthritis and Rheumatoid arthritis. One that is not familiar  Lupus erythematosus, and others. So what are we talking about? What are these conditions and what must you do to avoid them? I hope I can enlighten you.

Osteoarthritis – sometimes just termed as ‘arthritis’ is the most common type. It can affect any joint to include a weight-bearing hip or knee, or your neck or back. The cartilage deteriorates and smooth joint surfaces become rough, causing loss of joint flexibility, pain and stiffness and sometimes mild swelling, and even change in the structure.  It can come and go with continual use of these body parts.

According to my Taber’s Cyclopedic Medical Dictionary – ‘arthritis’ may ” result from or be associated with a number of conditions to include: infection (gonococcal, tuberculous, pneumococcal; rheumatic fever; ulcerative colitis; trauma; neurogenic disturbances; degenerative joint disease (as osteoarthritis); metabolic disturbances as gout;  etc. or periarticular conditions as fibromyositis, myositis, or bursitis etc.  Other terms include: acute secondary; acute suppurative; allergic; atrophic; deformans (deformity of fingers etc.) – progresses; degenerative – chronic, usually progressive, characterized by destruction of joint cartilage and other degenerative changes; fungosa; gonorrheal; gout; hypertrophic; neurogenic; neurotrophic – associated with nervous system; osteo- a chronic disease involving weight-bearing joints; pneumococcal – appearing as a sequel to lobar pneumonia, affecting one or more joints and the middle ear; psoriatic – usually accompanies psoriasis; and rheumatoid, a systemic disease of unknown cause in joints and related structures – tends to be chronic – and crippling deformities are the end result.”

Rheumatoid arthritis – was noted, in the Today’s Health & Wellness magazine, as being “probably an immune system disorder, associated with inflammation in a joint’s lining. It often begins with pain and swelling in your wrists, hands, feet or ankles, on both sides of your body at the same time and can affect your entire body, including heart, blood vessels and lungs.”

Lupus erthematosus – a type of arthritis, can affect the membranes lining your joints. It is a chronic and usually fatal systemic disease characterized by pathological changes in the vascular system. A skin rash is usually present. Symptoms include fever, arthritis, and signs of renal and lung and heart involvement in varying degrees. (If you have this condition – research it for yourself)

Apparently ‘arthritis’ doesn’t care whether you are male, female, old, or young. I have heard of 6 year olds having ‘arthritis’ – even rheumatoid arthritis.  Many years ago, arthritis was hard to diagnose. However, today the methods for treating arthritis have drastically improved. It is advisable to seek treatment right away if you suspect you have arthritis. Seeking treatment early improves the outcome in the long run.

Most ‘arthritic’ conditions are  progressive and can become chronic. It often involves a breakdown of a joint’s cartilage and inflammation in the joint’s lining that can affect muscles, tendons and ligaments. “As these tissues become shortened, your joint may become deformed and difficult to move.” Avoiding movement – which many people do – can weaken the muscles. Scientists aren’t sure what causes arthritis. However, once you have it and know that is what you have, inactivity may be a factor in allowing the cartilage and other soft tissues supporting a joint to become weak. “Exercise that keeps the muscles around your joints strong and toned helps protect them.” (W. Hayes Wilson, M.D.) The things Dr. Wilson advises against are – “seemingly inconsequential motions, awkward movement, like twisting while lifting as these may start a cascading pain event.” Researchers report that smoking more than doubles your chances of getting rheumatoid arthritis and makes it more damaging to your joints. The Common Cold!

Is there such a thing any more. When I was a little girl and you got sick you had a ‘cold’ – a Common Cold. Today the ‘common cold’ has been deemed the flu (1, 2, 3 and so forth), and many other names, illnesses, and diseases you may or may not have heard of.

The ‘common cold’ usually starts with a runny nose, chills, fever, aches and pains etc. The body – with these symptoms is doing what it does best. It is starting the healing process  by liquefying the toxic material that has gotten into the lymph system where it causes trouble. The runny nose liquid can be called snot, mucus, and ‘catarrh’ – something few of you have ever heard of. Running to the drug store and buying over-the-counter drugs that will suppress the cold symptoms is doing your body a disservice. You need to let the catarrh run. Catarrh comes from the Greek word ‘katarrhein’ which means “to flow down”. Let that wonderful body you have, do its work – liquefy the harmful wastes and toxins in your body and let them ‘flow down’ and out of the various body orifices.

As doctor Robert Morse N.D explains, “the common cold is a great life-preserving elimination process that your body uses to get rid of disease-causing toxins that would normally settle in the inherently weak organs, glands and tissues of the body, causing low-level inflammation.”

A cold is a catarrhal discharge. Don’t fight it or try to stop it, or get rid of it by the use of antihistamines or other cold remedies.

Catarrh can be eliminated in many ways, through the nose, the eyes, urination, the lungs, skin (sweat), etc. You do need to get rid of it, because if it is left in the body, catarrh can lead to pneumonia, kidney problems, bladder issues, and gastrointestinal problems.

How to get rid of it –

  • Drink juices and water to keep the catarrh liquefied
  • Get plenty of fresh air and stay in bed (if you can)
  • Sweat it out (it works – I do it). Sweating it out also gets rid of the fever and aches and pains.

Using the ‘common cold’ to your benefit gets the body clean. The catarrh gets rid of waste your body doesn’t want to use. ‘Catarrh’ is a blessing and should not be stopped with drugs. It helps you from developing other chronic illnesses. Fresh fruits and vegetable will not develop catarrh in the body, but those foods which act like ‘glue’ will. They include dairy, pastries, made from processed white flour, cheese, and pasta, etc.

The LIVER!

This is the first of a series of topics, to explain, in average person terms, the organs of the body and their functions.

Human Anatomy: Antererior View of the Liver

The LIVER is the largest organ in the body. It is located on the right side of the body beneath the diaphragm, level with the bottom of your sternum. The bottom of the liver is concave and covers your stomach, duodenum (the first portion of the small intestines), hepatic flexure of the colon (upper right turn, right adrenal gland and the upper portion of the right kidney.  (This is a watered down description so everyone can understand or maybe get a visual picture of it in your mind.) Your liver has four lobes and is covered by a thick, tough, fibrous membrane called the Glisson’s capsule. All the blood vessels and hepatic ducts enter the liver at the hilus.  This common bile duct then enters the upper portion of your small intestine, called the duodenum, at the papilla of Vater. This is the main digestive area of the body. The functional parts of the liver are the liver lobules, consisting of the liver cells, which are permeated by blood capillaries called sinusoids. The sinusoids are lined with the Kupffer cells, which are the immune cells of the liver. (Taber’s Cyclopedic Medical Dictionary)

The liver has so many functions..researchers have yet to discover them all.  An article in the ‘Energy Times’ magazine tells us that:

  • The liver works as a detoxifier of everything that enters the digestive tract. The liver’s immune cells digest bacteria, viruses and other pathogens within the blood from the digestive tract.”A healthy liver can metabolize hormones, chemical drugs, and other chemicals to a certain degree. However, our daily ingestion of these substances is more than most livers can cope with.” (Dr. Robert Morse, N.D)
  • The liver stores various amino acids obtained from digestion, then reconstructs them for essential body proteins. It synthesizes non-essential amino acids for growth and repair functions.
  • The liver works as a blood purifier, cleansing the blood of toxic substances and regulating the blood’s ability to clot.
  • The liver works as a processor, converting carbohydrates, fats and proteins into fuel the body can use. It converts excess glucose into glycogen (stored fat), then converts the stored glycogen back to glucose when the body needs extra fuel. It stores various vitamins, and minerals, to include iron and copper.
  • The liver works as an immunity enhancer, helping the body maintain hormonal balance and resist infection.
  • Alcohol may be regarded as sophisticated and fun, but when done to excess throughout adulthood, it can ravage the liver as does acidosis, toxic chemicals, drugs, etc. All are extremely harmful to your liver. Almost all drugs, especially coal-tar products like aspirin, severely destroy its tissues.
  • The liver is not only the most under appreciated organ, it’s one of the most crucial to staving off a number of serious diseases.
  • The liver produces and secretes approximately 1 liter of bile per day. Bile is a fat emulsifier and alkalizing agent.

The liver, which most people don’t understand, is also tied to the mind. When the liver is inflamed and impaired in its function – so is your mind, creating low self-esteem and anger.

According to recent scientific studies, “all that extra cholesterol (you are fighting to get rid of), comes from your Liver.” Only 15% of cholesterol comes from your diet. The other 85% is made in your liver…which happens when you’re under stress. In addition, when you eat a lot of sugary foods your body releases a form of adrenalin called cortisol which stimulates the production of insulin into your bloodstream which turns on the switch to make even more LDL cholesterol…this in turn leads you to battle heart and artery issues.

Study, and learn what you need to know to keep this workhorse, YOUR LIVER, running on all cylinders for years to come. It is imperative to say that we should take care of this most precious organ. Isn’t it time you showed your Liver a little Love?

Be Nice to Your NECK!

Pain in neck of women Stock PhotosModern life can be, at times, a royal pain in the neck…so to speak. We do many things that cause us to have various degrees of neck and shoulder pain – such as sitting for hours in front of a computer, ladies lugging heavy purses on their shoulders, when working out – lifting weights beyond your ability, accidents, lifting too heavy an item overhead, etc. Poor posture and other bad habits gradually lead to unbalanced muscles and/or mechanical problems in the joints of the neck and shoulders. In some cases the pain may be the result of a medical condition. Age is also a factor since as one grows older joints deteriorate. SO…be nice to your NECK:

    • Pay attention to your posture…keep your head centered over your spine.
    • Adjust your computer furniture…your computer monitor should be at eye level and your work surface elbow height. Sit back in your chair so the small of your back is supported. Also, standing up with the computer on a counter is helpful to the stress on the neck and shoulder. Alternate between sitting and standing.
    • Avoid cradling your phone between your ear and shoulder (if you still have that type of phone. However, I have seen people cradle their cell phones.
    • Maintain good posture when driving and walking or running.
    • Examine your sleeping habits…sleeping on the wrong pillow puts excess pressure on your muscles and ligaments and you wake up with a stiff neck.

When exercising – do exercises for your neck and shoulders – such as rolling them backward, and then forward…both shoulders at the same time or individually.The list could go on and on. The old dowager hump doesn’t look so good whether you are young or older. It doesn’t always come from genetics…so don’t say “my grandmother had one…it runs in the family.”

Access your habits and change those that need changing. 

A good neuormuscular massage is one of my remedies. It feels wonderful!

Gluten

What is GLUTEN? According to my handy Taber’s Cyclopedic Medical Dictionary – “Gluten is vegetable albumin, a protein which can be prepared from wheat and other grain.” You can free your diet of gluten by avoiding all products containing wheat, rye, oats, barley, or vegetables such as beans, cabbage, turnips, dried peas, and cucumbers. Rice, potatoes, corn and cornmeal are allowed. Gluten allows dough to rise – gives texture to bread.

My further research expanded on this. I hope I can help you understand the truth of what gluten is all about.

So…what are ‘gluten related issues’? Why do people think they have gluten issues and should be eating nothing but ‘gluten-free’ foods?

The latest “hysteria” seems to be related to gluten this, and gluten that. Is it a “fad”? Could well be. The 3 types of issues related to ‘gluten’ are: Celiac Disease, Wheat Allergy, and Gluten Intolerance. What are they and what are the differences between them?

CELIAC DISEASE – is an autoimmune disorder which gluten intake causes to worsen. However, Celiac Disease is seemingly rare. This disease “occurs in some people when fragments of gluten bond with intestinal proteins and provoke a misdirected immune overreaction from white blood cells, destroying the microscopic fingers called ‘villi’ that line the small intestine and normally absorb nutrients.” This causes the intestine to function incorrectly – thus belly pain, diarrhea, iron deficiency, etc. It is usually misdiagnosed. “Proper diagnosis is with a blood test and an endoscopic biopsy of the small intestine. Only 1% of the world’s population has this disease. Many physicians are not familiar with its signs.”

WHEAT ALLERGY – In this condition a wheat specific antibody called an IgE causes hives, anaphylaxis, sneezing and wheezing. “There is no good test for it. Blood tests called RAST are usually unreliable. e.g. “only 1 in 8 children or adults with a positive Ige test for peanuts is truly allergic.” “Because RAST tests can screen for dozens of possible allergies at once, there is a danger of over diagnosis, especially when interpreted by non-specialists.”

GLUTEN INTOLERANCE – is the most confusing. “This condition is neither an autoimmune disorder, like Celiac Disease, nor an allergy, like Wheat.” There is not even a mediocre blood test for ‘gluten intolerance.’ The diagnosis is really someone’s subjective feeling of symptoms to include bloating, bowel changes and/or mental fogginess after eating gluten. Thus we have what is called “pseudo-scientific self-diagnosis, because people believe they have illnesses caused by magnetic fields.” World wide, many scientific tests have been executed to decide the cause of ‘gluten intolerance’. The conclusion is “that many sufferers might not have gluten problems, but sugar problems called ‘fructans’ in wheat products.” Again, “almost 2/3 of the people who think they are ‘gluten intolerant’ really are not.”

I am not going to talk about what or what not to eat (gluten-free foods). It is up to you to draw your own conclusion from the above mentioned facts. Can what you believe to be a ‘gluten’ issue be a ‘diet’ (other foods you eat) issue? However, for a start there are grains that are not considered ‘gluten grains’. They include: oats, rye, quinoa, chia, spelt, buckwheat, amaranth, millet and black rice. These grains are considered healthy plant-based, protein vitamins, minerals and a variety of phytochemicals that will improve your health.

I have talked about toxins a lot. In todays lifestyle we are inundated by toxins via pollutants, poor diet (STAD), life stressors etc. They overload the system and cause aging, wrinkles, fatigue, lack of energy (I hear a lot from my friends, as well as from the ‘millenniums’), weakness, and many chronic dis-eases.

These are excessive health issues. How does the body deal with these issues? Research tells us that the body has a master antioxidant called Glutathione which plays one of the key roles on our health, enhancing one’s well-being, combating aging, cellular repair, and helps prevent cell damage caused by the free radicals.

Detox – Colon – Cleansing

Colon IllustrationThe basic method for detoxing consists of eating a healthy diet along with drinking lots of water and engaging in an exercise program, which cleanses the bowels/colon. The purpose for detoxing is to cleanse the intestines and free them of toxins. Another method would be ‘colonic irrigation’, which I have experienced and should be administered by a professional. However, after the colonic irrigation you must continue the basic method of detoxing listed above.

A healthy colon reflects a persons overall state of health. For you who are not aware, colon cleansing (irrigation) is an ancient idea once applied by the Egyptians, and is still practiced today in natural medicine.

Bowel issues result in constipation, waste, toxin, and unhealthy bacteria build up in the colon. This waste etc. is absorbed by the bloodstream from the intestines and passed to all the cells of the body. The problems experienced because of this includes; headaches, moodiness, hormonal imbalance, lack of energy, cancer, heart disease and an unhealthy immune system, allergies, skin disease, rheumatic illnesses, metabolic disorders, restless sleep and depression.

Treatment starts with the diet, eating lots of fresh vegetables and whole fruits that do not contain pesticides. Avoid fried foods, highly refined sugars, processed foods….does this sound repetitious? It is. I have said this in earlier blog in a different way, but repetition is good. You also may have read about it elsewhere, heard it on the radio, and seen and heard it on the TV.

You might say…’I’ll just give myself and enema.’ That is okay if you know how to do it, but keep in mind it only cleans out a small portion of the colon and is only a temporary fix. Bowel/colon cleansing, when done the correct way frees the digestive system of wastes and toxins, constipation buildup, and allows the intestinal lining to regenerate and maintain a balance of beneficial bacteria, uses and absorbs nutrients from food as it should. Your metabolism then becomes more efficient, providing the body with renewed energy.

Have you ever had a water leak anywhere in your home? Have you checked the drain in the kitchen, bathroom sink? Have you had moisture build-up or water damage under the kitchen, bathroom sink? With these incidences  you probably notice blackish, orange, greenish and purple areas that are visible to the naked eye? However, there are also hidden areas that you may not be aware of such as inside the toilet tank, toilet bowl, washing machine, dryer, black spots on the shower curtain, fuzzy white patches on the basement floor, crawl spaces under the house, etc.   Many folks are unaware that this may be – or is toxic mold.

TOXIC MOLD can make you sick. Scientific information tells us that “Stachybotry’s chartarum – known as ‘toxic black mold’, is a greenish-black mold, which grows on household surfaces that have high cellulose content, such as wood, fiberboard, gypsum board, paper and lint.”

Mold is a fungus. Mold spores thrive on moisture, reproduce quickly, and travel through the air. Mold is almost impossible to get rid of…but because it can’t live without moisture it can be controlled by reducing the moisture in the home or work place. This can be done by using dehumidifiers, air conditioners. Keep the humidity below 60%. Keep drains free from obstructions; keep house warm in cool weather; add insulation to cold surfaces e.g. exterior walls, floors, windows.  Avoid leaving damp clothes in laundry basket or dryer. Check for leaks around basins and tubs. If you experience water leaks, water line breaks, etc. dry the wet areas within 12 to 48 hours. On the outside of the house, slope the ground so the water runs away from the house. Have your heating and cooling systems checked on a regular basis. Keep doors open between rooms for better air circulation. Use fans if/and as needed. If you live in a mobile home, put a plastic cover over the dirt in crawl spaces and under the house to prevent moisture coming from ground. Ventilate crawl spaces if needed.

How does mold affect the health of humans? It is absorbed into the immune system, nervous system, gastrointestinal system, lungs, and liver, etc. where it builds up in the blood, and body tissues.
It then:

  • Triggers inflammation, allergies, asthma, oxidative stress, and immune dysfunction
  • Fatigue and weakness
  • Headaches, light sensitivity, poor memory, word and concentration difficulty
  • Muscle stiffness, joint pain, unusual skin sensations, tingling and numbness
  • Chronic cough, appetite swings, body temperature dysregulation
  • Increased urinary frequency, increased thirst, red eyes, blurred vision, mood swings, abdominal pain, diarrhea, bloating
  • Metallic taste in the mouth
  • Vertigo, feeling light-headed

    If you experience any of the above symptoms  – they are a signal, and it is imperative that something be done to find and eliminate all the household or workplace mold. You must reduce your exposure to mold.
